Im applying for food stamps/EBT in missouri?

And my case worker said that I would need my pay stubs from at least 5 weeks... If I don't have 5 weeks worth, does anyone know if I'll have to wait til i get 5 weeks worth? Or can I have a boss maybe write down the amount I was paid and have them sign it? I've called her so many times now about things that i feel like I'm basically nagging and probably driving her batty... Does anyone know for sure?
